Blackberry and Honey Highball

Here we dive into the world of Shrub cocktails. A shrub is a mix of fruit, vinegar, and sugar. During the time of the Whiskey Rebellion, Shrubs were often used to preserve fruit which would quickly spoil. In this Shrub cocktail, the vinegar is very much balanced with the blackberry, honey, and whiskey. It makes for a very refreshing drink!


Ingredients:

2 oz. Liberty Pole Corn Whiskey

1 oz. Blackberry Cider*

1.5 oz. Honey Lavender Syrup**

2 mint leaves

2 oz. Club Soda


*To make the blackberry cider, soak 1 cup of blackberries in 1 cup of vinegar for 2-5 days. Afterwards, bring it to a boil and then strain off the solids. Add 2 tbsp of honey.


**To make the honey lavender syrup, boil 1 tbsp of dried lavender in 3/4 cup of water for 3 minutes. Strain and add 1 cup of honey.


Directions:

Shake all but club soda on ice. Add club soda and gently stir. Then strain into a chilled highball glass and add ice. Garnish with a mint leaf and fresh blackberry. Cheers!
