Spiced Pineapple Highball

If this cocktail had been photographed in a tiki mug, you wouldn't know that it doesn't have any rum in it. This is a delightful beach drink - or a middle of the winter cocktail when you wish you were on the beach.




Spiced Pineapple Highball

2 oz. Spiced Pineapple infused LPS Bourbon

2 oz. pineapple juice

1/2 oz. cream of coconut

3 drops vanilla extract

2 dashes angostura bitters


Shake on ice.

Strain into short highball glass.

Add ice.

Garnish with pineapple on a stick. We used the pineapple left over from the infusion.


Spiced Pineapple Infused Bourbon

1 bottle LPS bourbon

1 pineapple, skinned and chunked

1 tsp pumpkin pie spice


Combine all ingredients in a jar with a lid. Let sit for 3 days, shaking occasionally. Strain off pineapple and use. Refrigerate when not in use.
